Spicy sausage soup

As a busy mom cooking is difficult. It is time consuming from the planning, shopping, chopping, and cooking time, and then you have to clean all the pots and pans. But I have collected over the years simple and easy recipes that take up less of my time and my kids will actually eat. 

This soup is packed full of nutrients and the paprika spice will warm your belly and it is perfect on those winter days. Kale is also packed with vitamin C which is perfect for the sniffles that go around. 


Spicy Sausage Soup 

ingredients: 

2 tbsp extra virgin olive oil

Jimmy dean - premium sausage -hot 

1 yellow onion

4 large carrot chopped 

2 garlic cloves-minced 

4-6 medium Yukon potatoes -diced 

32 oz chicken broth (organic) 

1 cup water 

2 tsp paprika 

2  cups kale-stems removed

 

 

First, cook the sausage in the stock pot with the olive oil until brown. Remove the sausage and set aside. 
You will then cook the carrots, potatoes, onion, garlic, and paprika in the oil and sausage grease. If it is sticking add more olive oil. 
After you sauté them for about 15 minutes or so, add the chopped kale and cook for 5 more minutes. 
Add the chicken stock and water. Bring to a boil and let simmer for 20-30 minutes or until your potatoes and carrots are soft. 

You can serve with salt and pepper or parsley for a garnish. 

 

If you decide to cook more often I would recommend investing in some good cookware. I know there a lot of options out there and it can get overwhelming. After I did lots of research I found that stainless steel was the best. It is nontoxic, easy to clean, and lightweight. On Black Friday I found this contour set that I liked the look of.
